Trypsin is an endopeptidase which selectively cleaves peptide bonds at the carboxyl side of arginine and lysine, and ester and amide bonds as well. Due to its high selectivity, trypsin is used for peptide fragmentation for the amino acid sequencing analysis of proteins.

N-alpha-tosyl-L-arginine methyl ester (TAME) + H2O -> N-alpha-p-tosyl-L-arginine + methanol
