Kitalase is an enzyme isolated from Rhizoctonia solani which is used for the degradation of cell walls and cell membranes when preparing fungi protoplasts. This enzyme is suitable for the lysis of yeast and is particularly effective in living cells. In addition to it’s protease, hemicellulose amylase and pectinase function, the main activity of this enzyme focuses on the β-1,3-glucanase catalysis.
